Pearl is the latest masterpiece in dining elegance from the renowned Tony Chi. Patrons dine in a serene, contemporary Chinese environment. Subtle western undertones in the room design are carried forward into the menu. Chef Kai-Wa Yau has created a menu that tempts the palate with culinary masterpieces from each of the four Chinese cooking methods - steamed, braised, baked and fried. Pearl offers four tasting menus designed to tempt even the most mercurial palates. Signature items from the menu include Asian Bouillabaisse, Shark Fin and Dungeness Crab Spring Rolls and a Steamed Maine and Australian Lobster Tasting.
The tea trolley in Pearl is arguably the finest tableside Chinese Tea presentation in the United States. Guests can choose from exotic teas imported specially for Pearl from remote areas in Asia all prepared tableside with select bottled and mineral waters.
Pearl's Western flair is evident throughout the dining experience. A dedicated wine cellar, an aperitif trolley and a digestif selection along with a Sommelier, also not usually found in traditional Chinese restaurants, assist guests with wine and beverage pairings throughout the meal.
Desserts at Pearl also are a departure from the traditional offerings of Asian restaurants and feature strictly French Pastries. The tempting finale includes Caramel Bavarois with Passion Fruit Cremeax, Napoleon of Orange Blossom with Raspberries and a selection of Lychee - Green Tea, Passion Fruit Sorbet and Seasonal Fruits.
